Spectrum Recipes: Tasting Colors

This summer and monsoon, indulge in some healthy eating that incorporates every shade of the spectrum, all with Ladle & Love! This fantastic new startup is based out of Bangalore, and spreading food, smiles, and of course, some delicious goodies all of which are super healthy.

Rainbow Pasta Salad

Ingredients 

  • 100 Grams Pasta
  • 1 small Bell pepper 
  • 2 Tomato – deseeded 
  • 50 grams Corn kernels
  • 1 Cucumber 
  • 1 Onion
  • 1/2 stem Celery 
  • 50 grams Peanuts 

Dressing 

  • 2 cloves Garlic 
  • 2 tsp Vinegar 
  • Salt to taste  
  • 1 tsp Sugar
  • 150 ml Olive oil 
  • 1 tsp Chilli paste
  • 2tsp Tomato paste

Method 

1. Cook the pasta according to the instructions on the packet 

2. Cut all the vegetables into bite sized cubes 

3. Roast some peanuts in a pan 

4. In a glass bottle, add all the ingredients for the dressing and give it a good shake 

5. Add the vegetables and pasta to a mixing dish 

6. Add the dressing and toss 

7. Top with peanuts and serve

Black Eye-d Pea Salad

Ingredients 

  • 100 grams Black eye-d peas (cooked)
  • 1 small-sized Onion
  • 1 small-sized Tomato (de-seeded)
  • 1/2 Cucumber
  • ½  Bell pepper
  • 1/2 Charred corn on the cob scraped off
  • 50 grams Roasted almonds 

Dressing- 

  • 3-4 tablespoons Olive oil
  • Salt and pepper to taste 
  • 2 Garlic pods (grated)
  • 2 teaspoons Lemon juice

Method 

1. Cook the black eye-d peas in a cooker with a pinch of salt

2. Cut all the vegetables into bite sized cubes 

3. Roast the almonds in a pan 

4. In a glass bottle, add all the ingredients for the dressing and give it a good shake 

5. Add the vegetables and black eye-d peas to a mixing dish 

6. Add the dressing and toss 

7. Top with almonds and serve

5 Veg and Cottage Cheese Steak 

Ingredients

  • 1 Zucchini
  • ½ Corn on the Cob
  • 10 Button Mushrooms 
  • 2-3 Potatoes
  • 1 small head Broccoli 
  • 200 grams Cottage Cheese 

Method

  1. Cut all the vegetables except the corn into cubes or really, any way you prefer your veg
  2. Line an oven tray with foil and lay all the vegetables on the pan
  3. Drizzle some olive oil, salt, pepper, garlic and herb of your choice (I prefer thyme) and place it into the oven (160 deg C for 30 minutes)
  4. On your stovetop, char the corn evenly on all sides
  5. For the cottage cheese, you could use a grill pan or any flat cooking surface
  6. Pour some oil on the surface, place your steak and sprinkle some salt and pepper on it
  7. Place all your components on a plate and enjoy
